Lazy weekend mornings call for lazy meals BUT there cannot be a compromise on the deliciousness factor! So here’s my extra easy and tasty breakfast meal (or even party snack) for when you only want to spend 5 minutes of effort on your food.

Yields about 8-10 toasties.

Ingredients

  • loaf of dark ciabatta-style bread
  • 2-3 large tomatoes
  • 1 pack of fresh mozzarella
  • green pesto
  • handful of fresh basil
  • balsamic glaze

Instructions

  1. Preheat oven to 200 C // 390 F degrees.

  2. Thickly slice the bread and arrange slices on a lined baking sheet.

  3. Slice up both the tomatoes and mozzarella.

  4. Slather about a teaspoon of pesto on each bread slice, add 2 or 1 ½ tomato slices next to each other and put some mozzarella on top (I would put half a slice of mozzarella on each tomato slice).

  5. Bake for 7-10 minutes or until the mozzarella has melted and the edges of the bread slices look a bit crispy.

  6. Let them cool a bit (trust me, at this point the temperature of the tomato will be basically lava) and serve with some chopped basil leaves and a drizzle of balsamic glaze.
