This time of year I am thinking of all the ways I can consume strawberries, and rightfully so – I know well enough that this period in summer when GOOD and local strawberries are accessible is way too short and it tends to end before you’ve been able to get fed up.
I decided to switch up our usual dinner salad recipe for this and I myself think it’s bomb, but you can try yourself and let me know… (: To be fair, it’s very easy and ingredients are very approximate as I always just throw stuff together, so as long as you make it kind of like this, it will turn out great! (aka please don’t bother weighing out cheese, just add however much you like).
Makes enough for 2 people.
Ingredients
- 2 handfuls of spinach
- 2 small avocados
- ½ long cucumber
- 6-10 strawberries
- ⅓ red onion
- 70 g // 2.5 oz soft goat cheese
- handful of walnuts
- croutons, optional
For the dressing:
- 2 tbsp olive oil
- 1 tbsp white wine vinegar
- 1 tbsp lemon juice
- squeeze of agave syrup
- big pinch of salt
Instructions
- To a large salad bowl, add the spinach. Peel and slice the avocados and cucumber. Slice the strawberries and red onion and add all to the bowl along with torn pieces of goat cheese (yes, it’s messy and you’ll be licking it off your hands after), and halved walnuts.
- Make the dressing, pour it over and add croutons on top. Voila!
