I have to admit, this picture does no justice to the banana bread and I am sorry. Problem is, whenever I make it, it tends to disappear even before I’ve managed to take it out of the tin. I promise to snap a better photo soon!

All in all, you won’t want to share this banana bread with your family because then there will be no left and you will have to bake another one. Oh, wait, that does not sound like a big problem, never mind! (:

Ingredients

  • 3 medium-sized ripe bananas
  • 110 g // ½ cup brown sugar
  • 100 g // ½ cup granulated white sugar
  • 115 g // ½ cup butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • 120 g // ½ cup greek yogurt
  • 180 g // 1 ⅓ cups plain flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 150 g // ¾ cup dark chocolate (or chocolate chips)

Instructions

  1. Preheat oven to 160 C // 325 F and grease and line a loaf tin. I like to put 1 tsp of oil in the tin, spread it around and then put in baking paper, so that it sticks to the sides.

  2. Mash up the bananas in a bowl and set aside. Melt the butter and add to a large bowl. Whisk in both sugars until well combined.

  3. Add in the mashed bananas, then eggs, yogurt and vanilla. Mix well.

  4. Fold in the dry ingredients – flour, soda, salt – bit by bit so there are no lumps. Chop up the chocolate into little pieces and mix them in the batter as well.

  5. Pour the batter into the lined loaf tin and spread it evenly. If you want you can 1) sprinkle extra chocolate chips on top, 2) sprinkle some brown sugar, 3) or decorate with 1 banana cut lengthwise with the cut sides up. I like to opt for the sugar version with this bread.

  6. Bake the bread for 1 hours to 1 hour 20 min – basically until a toothpick comes out dry-ish. If you take it out before it is well done, the bread will be extra moist and gooey, which is not necessarily bad but I prefer mine to hold shape. Ideally, you will want to let the bread sit in the tin to cool down, but realistically, you can lift it out of the tin using the baking paper flaps on each side, place it on a cutting board and cut some thick and steamy slices.
