Fresh and Juicy Turkey Sandwich

I dreamt up this sandwich, went to the store to get the ingredients, came home to make it and it turned out even better than I could have expected! Now, I don’t crave meet often, but when I do, it’s very limited and always a very specific craving – this sandwich needed turkey deli meat or I wouldn’t have made it at all.

Anyway, it’s great for breakfast or as a snack. Once I made it for the first time, we had it for breakfast every day that week. Add more ingredients or take out some – it will be great regardless. 🙂

Makes 2 sandwiches.

Ingredients

  • 4 slices of thin, dark and grainy bread (my fave for this is the Rudzu rikas)
  • cream cheese (I actually used Dzintars for this)
  • 6 slices turkey deli meat
  • horseradish sauce from IKEA, optional
  • mayonnaise
  • sweet mustard
  • handful of baby spinach
  • 1 large tomato
  • 1 avocado (optional, as this makes all other ingredients tend to slide out :D)
  • pickles

Instructions

  1. Toast all 4 slices of bread.
  2. To make one sandwich, take 2 slices of bread and spread cream cheese on one, and then mayonnaise and sweet mustard of the other slice.
  3. On the slice with cream cheese, lay down 3 folded slices of turkey meat next to each other. For Mikus, I will also spread a bit of the IKEA sauce on top.
  4. On the other slice, put some spinach to cover the mayo, then add 2 big slices of tomato. On top of that, add slices of half an avocado and sliced pickles.
  5. Attempt to put the slice with turkey on top of the other one. To serve, carefully cut the sandwich in half. Grab a napkin and enjoy! (Everything should start falling apart but that’s okay, life is messy and so is my sandwich game.)
