A weekend tradition of ours is getting a BLT bagel from the Big Bad Bagels shop in Riga. Whether that’s ordering in and eating them in bed, or hopping on a bike to Baznicas street so that it can be accompanied by a fresh cup of coffee from Kalve – it has become a very frequent occurrence.
That was until we realized we could attempt to make them ourselves (I know shocking). My main gripe is the quality of bagels that you can get at the store and how actually bagel-y they are, but honestly, this turns out great either way.
For one bagel sandwich you will need
- 1 bagel, cut in half
- 4 strips of bacon
- a few crunchy lettuce leaves
- 1 big slice of tomato
- 1 fried egg
- 2 tbsp mayo
- 1 tbsp mustard (I alternate between using sweet mustard or dijon)
Toast the bagel, mix together the mayo and mustard, and then lather it on both bagel slices.
My order of assembly, from the bottom: lettuce, tomato, fried egg, bacon. Et voila, breakfast is done!
