Double Chocolate Chip Fudge Brownies

Kicking this blog off with a bang (and possibly diabetes)! For some context, I plan to share all the recipes I make at home that I think deserve to see the light of day and hopefully, at some point, the light of your kitchen too. 

I am no expert, but I sure do love food and I’ve come to the point where instagram stories can no longer satisfy my desire to share with all things delicious. Lots of inspiration from other food blogs and recipe sources, of course, however, I felt the need to have my own little corner on the internet specifically for my collection. Hope you enjoy! If not, at least I’ll have a pretty and well-structured recipe library – win-win! ;D

In order to accommodate all my hungry friends and acquaintances, I’ll do my best to post all the measurements in both grams and cups, cause I know firsthand how inconvenient it can be to have to convert them.

So, back to brownies… Perfect for sharing (as they are incredibly rich and sweet that anything more than 2 squares at a time will put you in a mild food coma), this recipe is my go-to when I’m looking to both impress and feed a bigger group of people. 

Fudgy, chewy, and best of all – incredibly simple to make!

This recipe makes A LOT – bring it to work or a party!

Ingredients

  • 300 g // 1 ⅓ cup butter, room temperature
  • 500 g // 2 ½ cup sugar
  • 4 eggs
  • 2 tsp vanilla sugar (I’m never fancy enough to have vanilla extract on hand, but that would be also perfect)
  • 250 g // 2 cups plain flour
  • 80 g // ⅔ cup unsweetened cocoa powder
  • 1-2 tsp salt
  • 200 g // 1 cup white chocolate
  • 200 g // 1 cup milk chocolate

Instructions

  1. Preheat oven to 180 C // 360 F degrees.

  2. In a large bowl, cream together room temperature butter and sugar.

  3. Beat in all the eggs and add vanilla.

  4. Add flour bit by bit, cocoa, salt and mix to combine.

  5. Roughly cut up chocolate if not using chocolate chips, add them in and mix until combined.

  6. Spread batter into a greased 20cmx30cm // 8inx12in baking dish.

  7. Bake for 30-40 minutes, or until an inserted toothpick comes out clean.
